Finely chop the green pepper and shallot.
Strain the tuna and mix the tuna, green peppers, onion, any mayo together. Add salt and pepper to taste. We like a lot of pepper.
We like to store the tuna in 5 portions separately from the bread and chips until you are ready to eat. The best move is to toast your bread and then put the tuna mixture on it and top it with 1/5 of the chips.
