Eggplant Sammy

This is our first Six Ingredient Lunch. We really think you are going to like the perfectly roasted eggplant with the sweet caramelized onions topped with a nice tangy and peppery arugula. This recipe makes 5 lunches. Each sandwich (lunch portion) has about 375 calories.

 1 large Eggplant
 1 large Onion
 1 lemon
 5 oz spreadable Goat Cheese
 3 oz Arugula
 1 Baguette
In Your Pantry
 Salt and Pepper
 Olive Oil

Preparation Instructions

Preheat your oven to 450 degrees.

Partially skin the eggplant with a peeler. We like to keep some of the skin for a nice texture and it helps the eggplant keep it's shape.

Slice the eggplant into a multiple of five slices. Ten slices should work. Then put all the slices on to a wire rack and sprinkle with salt. Let them sit until the onions are done caramelizing.

Slice the onion relatively slim and caramelize them. Here is a great quick and easy way to caramelize onions.

At some point during the carmzling process flip and salt the other side of the eggplant slices.

Drizzle olive oil on both sides of the eggplant slices. Using about 2 tbsp. total. Sprinkler them with fresh ground pepper. Place the the eggplant slices on the wire rack or on parchment paper and place them on a baking tray. Place them in the oven for 30 minutes. Flip them once or twice while baking.

While the eggplant preps you can cut the lemon, bread, and goat cheese into five equal portions.

Remove the eggplant when it looks something like the below photo.

We enjoyed using these containers to store the 5 lunches for the week. It is pretty easy prep this week. Just divide everything into five portions (there is a lemon slice below the arugula) and store in the refrigerator until ready to eat.

When you are ready to eat, toast the bread and spread the goat cheese onto the bottom half. Cover that with the eggplant pieces and then the onions. Squirt the lemon onto the arugula and toss it with some pepper or other desired spice. Top the sandwich with the arugula and the other half of bread. Enjoy!
